Fried Rice with Chicken & Crisp-Fried Holy Basil

I may have over fried the basil leaves. 

Also known as Khao Phat Gai Kra Prao Krop, this is one of my favourite Thai rice dish. It is spicy and flavoursome. I cooked it up today and was happy with my result, thought I should share it with all of you here.


2 cups vegetable oil
3 cups holy basil leaves
2 tbsps small garlic, minced
2 tbsps red and green hot chilliews, chopped
1 cup chicken tenderloin, chopped
3 tbsps fish sauce
1 tsp sugar
1tsp dark soya sauce
3 1/2 cups cooked rice
1 tsp hot pepper
green and red hot chillies for garnish
condiment: cucumber slices


1. In a pan, heat the oil over medium heat. Fry 1 cup of holy basil leaves. Stir continuously until some of them turn glossy. Remove and drain off the excess oil. Put aside.

2. Drain away the oil and leave only  cup in the pan. Stir in teh garlic and hot chillie until they are fragrant. Add the chicken, cooking until it is just done. Season with fish sauce, sugar and dark soy sauce. Toss to combine. Add the remaining holy basil leaves and cooked rice, tossing again. Turn off the heat.

3. Transfer to a serving dish. Sprinkle crisp-fried holy basil leaves and pepper on top. Garnish with hot chillies and serve with condiment.
